Twinkie
Flour

Batter
1 cup flour
1 tablespoon malt vinegar
1 teaspoon baking powder
1 teaspoon salt
12 ounces water

Place Twinkie in refrigerator to cool.

Mix batter ingredients until they are the consistency of a custard.

Roll Twinkie in flour, then in the batter.

Drop the battered Twinkie into an industrial deep fryer for about 90 seconds, just until the filling is starting to melt and the outside is a nice golden brown.

Top with powdered sugar, cut in half on the bias, and serve with a four-berry coulis.

To make the coulis, put equal quantities of frozen raspberries, blackberries, strawberries and blueberries into a pan on low heat with a tablespoon of sugar per each cup of berries. When mixture begins to boil, put it into a blender. Then put it through a sieve. Push the pulp of the berries through.
