Recipe for Salisbury Steak from the Cooking For A Crowd section.

Salisbury Steak

Serves 100.

17 pounds raw ground beef (no more than 24% fat)
1 pound 8 ounces rolled oats
6 large eggs
2 cups water
2 cups beef stock
1 cup non-instant/non-fat dry milk
1 cup dehydrated onions
1/2 cup parsley flakes
1 tablespoon black pepper

Blend all ingredients in mixer for 4 minutes on low speed. Do not over mix.

Portion steaks onto ungreased sheet pans (18 x 26 x 1 inch) with a 1/3 cup scoop, approximately 25 steaks per pan. Flatten into an oval patty.

Bake until browned in conventional oven at 350 degrees F for 25 to 30 minutes or convection oven at 300 degrees F for 15 to 20 minutes. Transfer steaks to steam table pans (12 x 20 x 2 1/2 inches).

For 50 servings, use 2 steam table pans. For 100 servings, use 4 steam table pans.

Serve with Brown Gravy.
